Yes, I'm a potato lover. All types of potatoes, including sweet potatoes, russet potatoes, yellow potatoes, Irish potatoes, etc.
As a kid we always had potatoes every day, seven days a week without fail. They were a mainstay as part of our daily meals. I can remember that they would bring in large burlap bags of potatoes, and they would be put in the cellar where it was cool. I would be sent down there to get some, and always was greeted by those sprouting potatoes poking out through the burlap bag. I looked for the potato to appear when I was digging for them in the garden, knew there would be a meal.
Special potatoes were at Thanksgiving. That's when we had fresh sweet potatoes cooked with brown sugar and butter, oh so delicious! Now, my grandma would always make sweet potato pies from scratch.
All the regular potatoes were either mashed, baked, potato & ham hocks soup, or became potato salad.
My favorites are: mashed with butter, salt & ground peppercorn mix, chopped chives. Baked with butter, salt & pepper, fresh chives, sour cream, crumbled bacon, and shredded sharp cheddar cheese. I make a mean dijon mustard & parmesan potato salad to. Let's not forget those delicious hash browns, O'Brien potatoes, tater tots, and oh yes; those french fries.
Now I'll leave the rest up to the other potato lovers........
